When I was recording guitar parts for Joe Covenant's song "Ghoul Tide," one of my ideas was to use a mellow jazz tone with electric guitar. I recorded this using a Peavey Limited with the neck humbucker and the tone control rolled down.

Joe didn't wind up going with that idea, so I didn't complete or polish up the parts, but here is a little taste of what it might have sounded like.
